My All Time Favorite Mac & Cheese
I love myself some boxed mac and cheese but sometimes I want that authentic homemade taste so when I have the time this is my go to recipe!
My husband loves spicy.. me on the other hand? Not a huge fan. This recipe is perfect because it’s one of our “meet in the middle” recipes, has a kick but not too spicy so we’re both satisfied.
The breadcrumbs are the perfect addition to any mac and cheese to add that extra texture and crunch 🤤
INGREDIENTS
1/2 lb elbow macaroni (half a box)
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
1/2 cup heavy cream
1 cup shredded sharp cheddar cheese
1/2 cup shredded Monterey Jack cheese
2 jalapeños, seeded and diced
1/4 cup cream cheese, softened
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Breadcrumb toppings:
1/4 cup panko breadcrumbs
1 tablespoon melted butter
1/8 cup grated Parmesan cheese
DIRECTIONS
1. Preheat the oven to 350°F (175°C).
2. Cook macaroni according to package instructions until al dente; drain and set aside.
3. In a large saucepan, melt 1 tablespoon of butter over medium heat. Stir in flour to create a roux and cook for 2 minutes.
4. Gradually whisk in milk and heavy cream, and bring to a simmer. Cook until the mixture thickens.
5. Reduce heat to low and add shredded cheddar, Monterey Jack cheese, cream cheese, diced jalapeños, garlic powder, and onion powder. Stir until the cheeses are melted and the sauce is smooth. Season with salt and pepper.
6. Combine cheese sauce with cooked macaroni, then transfer to a greased baking dish.
7. In a small bowl, mix panko breadcrumbs with 1 tablespoon of melted butter and grated Parmesan cheese. Sprinkle this mixture over the macaroni.
8. Bake for 20-25 minutes, or until the top is golden and crispy.
Enjoy! 🧀💛

Mac and cheese is a beloved comfort food that can be customized in countless ways. For those who enjoy a little bit of heat, adding jalapeños not only enhances the flavor but also provides a vibrant kick. Consider using fresh jalapeños for a crisp texture or pickled ones for a tangy twist. To ensure your mac and cheese is perfectly creamy, remember to mix the cheeses gently into the sauce, allowing them to melt slowly, and avoid boiling the cream to maintain its richness. Additionally, the combination of panko breadcrumbs with Parmesan cheese adds a delightful crunch that contrasts beautifully with the smooth cheese sauce. For an extra layer of flavor, you could experiment with adding spices such as smoked paprika or a dash of cayenne pepper. This versatility makes mac and cheese an excellent base for various ingredients, whether it's protein like chicken or lobster, or vegetables like spinach or broccoli. Whether you’re preparing this dish for a family meal or a potluck, it's a guaranteed crowd pleaser. Pair it with a light salad or some steamed veggies to complement the richness of the mac and cheese. Enjoy your cooking adventure!
