Potato Flautas using leftover mashed potatoes
I made some mashed potatoes (I didn’t make the instant potatoes but that may work too) the other night for dinner so I decided to make potato flautas with the leftovers!!
•small tortillas
•leftover mashed potatoes
•can of cut carrots (mash them)
•smoked paprika
•taco seasoning packet
•sour cream
•Shredded Mexican cheese
•shredded sharp cheddar cheese
•oil of choice to fry flautas(can be air fried also)
I mixed the mashed potatoes with a can of drained cut carrots that I mashed up. You can use diced fresh carrots and sauté them to soften but I wanted to shorten the time.
I dropped a spoonful or two of sour cream in along with a sprinkle of Mexican cheese and sharp cheddar cheese.
1/2 packet of taco seasoning (the whole packet is fine too)
Mixed it all together and seasoned it with paprika & garlic powder.
Fill the tortillas with the potato mix, roll and fry in the skillet for a few seconds.
