I usually start with fresh Scotch bonnet peppers (adjust to your spice preference!), garlic, ginger, thyme, allspice, and a touch of brown sugar and soy sauce. Blending these ingredients into a paste and letting the chicken marinate overnight makes all the difference – it really lets those flavors soak deep into the meat, ensuring every bite is packed with that authentic Caribbean kick. When it comes to cooking, I love using the BBQ because it gives that fantastic smoky char, but you can definitely achieve great results in the oven or even an air fryer if you don't have a grill. The key is to cook it slowly enough for the chicken breast to remain incredibly juicy while getting that beautiful caramelized crust. I usually sear it first at a higher heat, then reduce the temperature and let it finish cooking through, basting occasionally with any leftover marinade. Now, let's talk about the sides because they truly complete the meal! My fried plantains are a must-have.
