Banana pudding cookies 🍌🍪

RECIPE

Banana nilla cookies:

2 bananas (mashed)

1 cup unsalted butter (2 sticks, melted and cooled to room temperature)

1 cup granulated sugar

1/2 cup light brown sugar

1 egg yolk, (room temperature)

1 tsp vanilla extract

2 3/4 cups all-purpose flour

1 tsp baking soda

1 tsp salt

1 cup Nilla Wafer crumbs

1 cup white chocolate chips

Vanilla pudding whipped cream:

1 (3.4 oz) package Vanilla Instant Pudding Mix

1/2 cup Milk

1 tsp vanilla extract

1 cup heavy cream

Nilla Wafers

1. Melt butter and set aside to cool.

2. In a medium bowl, and the dry ingredients, flour, baking soda, and salt. Set aside.

3. Mash up the bananas and set aside.

4. In a large bowl, add the cooled butter and sugars. Using a hand mixer, beat the ingredients until well combined.

5. Add the mashed banana, egg yolk, and vanilla extract. Mix until well combined.

6. Add the dry ingredients to the wet and mix on low and then on medium until just combined.

7. Fold the Nilla Wafer crumbs and white chocolate chips. Don’t over mix! Let cookie dough rest for 15 minutes.

8. Preheat oven to 350° and line a baking sheet with parchment paper. I used 2 baking sheets.

9. Using a 2 inch cookie scooper, scoop out cookies and place them on the baking sheets.

10. Bake for 10-12 minutes.

11. Let the cookies cool on the baking sheet for 5 minutes before moving them to a cooling rack to completely cool.

12. While cookies are cooling, add the vanilla pudding mix, milk, and vanilla extract to a medium bowl. Mix on high until a pudding mixture forms.

13. In a separate bowl, mix the heavy cream until stiff peaks forms.

14. Gently fold whipped heavy cream into the pudding mixture.

15. This next step you can do whatever you like, I piped the vanilla pudding whipped cream on the cookies, but you can also just spoon on the whipped cream.

16. Top with Nilla Wafers and enjoy 💛
