Turtle Mini Cheesecakes Recipe

Ingredients:

For the Crust:

1 cup graham cracker crumbs

1/2 cup pecans, finely chopped

1/2 cup mini chocolate chips

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

2 large eggs

1/2 cup sour cream

1 tsp vanilla extract

For the Caramel Sauce:

1 cup granulated sugar

1/4 cup water

1/2 cup heavy cream

2 tbsp unsalted butter

1 tsp vanilla extract

A pinch of salt

For the Topping:

Dark chocolate chunks

Pecan halves or pieces

Instructions:

Prepare the Crust:

Preheat your oven to 325°F (163°C).

In a medium bowl, combine graham cracker crumbs, finely chopped pecans, mini chocolate chips, and sugar.

Stir in the melted butter until the mixture is well combined.

Press the mixture firmly into the bottom of a greased muffin tin lined with cupcake liners.

Bake for 5-7 minutes. Remove from the oven and let it cool while you prepare the filling.

Make the Cheesecake Filling:

In a large bowl, beat the softened cream cheese until smooth and creamy.

Add the sugar and beat until fully combined.

Mix in the sour cream and vanilla extract.

Add the eggs one at a time, beating after each addition until smooth.

Bake the Mini Cheesecakes:

Pour the cheesecake filling over the cooled crusts in the muffin tin, filling each about 3/4 full.

Bake in the preheated oven for 18-20 minutes, or until the centers are set but still slightly jiggly.

Turn off the oven and let the mini cheesecakes cool inside the oven with the door slightly open for about 30 minutes.

Remove from the oven and let them cool to room temperature. Then refrigerate for at least 2 hours or overnight.

Prepare the Caramel Sauce:

In a medium saucepan, combine the sugar and water. Cook over medium heat, stirring constantly until the sugar dissolves.

Once the sugar dissolves, stop stirring and let the mixture come to a boil. Continue boiling until it turns a deep amber color.

Remove from heat and carefully add the heavy cream, butter, vanilla extract, and salt. Stir until smooth. Allow the caramel to cool slightly before using.

Assemble the Mini Cheesecakes:

Remove the mini cheesecakes from the refrigerator and from the muffin tin.

Spoon a generous amount of caramel sauce over each mini cheesecake, allowing some to drip down the sides.

Top with dark chocolate chunks and pecan halves or pieces.

Serve:
