First Ever artisan loaf🍞

My first ever loaf came out way better than expecting, the successful parts were that it was fully cooked with a great crispy crust, the part that needs improvement is the crumb. It tasted great but it came out dense and kinda gummy. This was a fun recipe to try, I’ll definitely be making it again to try and perfect it😁 would love any tips for future loaves if you have any to share!

After some research and trial, I realized that the density and gumminess often come from under-proofing or using too much flour during shaping, which impacts the bread’s aeration. For your next loaf, try extending the proofing time and be cautious with flour quantity, aiming for a slightly sticky dough that’s still manageable. Another useful tip is to incorporate steam in the oven during the first 10 minutes of baking. This helps create a glossy, crispy crust and allows the bread to expand fully before the crust sets. You can add steam by placing a pan of water in the oven or spraying water inside just before baking. Using high-quality flour, preferably bread flour with higher protein content, can also improve gluten development, leading to a better crumb structure. Additionally, gentle folding during fermentation helps create air pockets without deflating the dough. Remember, artisan bread making is as much an art as it is a science. Each bake teaches you something new about dough behavior, baking temperatures, and timing. Don’t be discouraged if your crumb isn’t perfect the first time — with patience and practice, you’ll soon bake loaves with a delightful open crumb and a crust that snaps beautifully with every bite!
