It’s a great way to sneak in some veggies while indulging in a classic comfort food. They’re perfect for sharing and offer a fun way to try a variety of flavors and textures. I also enjoy making bean and rice bowls with nutritional yeast, lettuce, lime, and chipotle refried beans. This is a hearty, plant-powered meal that’s easy to customize with your favorite veggies and sauces. One tip I’ve found helpful is to aim for a mix of textures and flavors in every dish—combining salty, sweet, creamy, and crunchy elements to make the meals more exciting.
