Chicken

* 4 bone-in, skin-on chicken thighs

* 1 tsp salt

* 1 tbsp avocado oil

Spice Blend

* 1 tsp onion powder

* 1 tsp garlic powder

* ¾ tsp dried parsley

* ¾ tsp dried oregano

* ¼ tsp black pepper

Potatoes

* ~¾ lb gold potatoes, diced

* ½ tsp paprika

* 2 tbsp olive oil

* ½ seasoning mixture

Herby Yogurt Sauce

* ½ cup plain Greek yogurt

* 2–3 tbsp fresh lemon juice (to thin + brighten)

* ¼ cup fresh parsley

* 2 garlic cloves

* ½ tsp onion powder

* ¼ tsp salt

* ¼ cup chopped fresh chives

Directions:

1. Prep Chicken

* Preheat oven to 375F

* Pat chicken dry, season with salt

* Let sit uncovered in fridge 30–60 min (optional but worth it for crispy skin)

2. Make Spice Blend

* Mix all spices in a small bowl

3. Make Yogurt Sauce

* Whisk (finely chopped):

* Greek yogurt, lemon juice, parsley, garlic, onion powder, salt

* Stir in chives

* Chill until ready

4. Bake Potatoes

* Cook at 375 for 30-40 min

5. Roast Chicken

* Toss chicken with olive oil + ½ spice blend

* Bake skin-side up 30–35 min (smaller batch cooks a bit faster)
