Chicken Tray Bake
Ingredients:
* 4–5 potatoes
* 1 large onion
* 2 green peppers
* 1 red pepper
* 1 pack boneless chicken thighs
For the sauce:
* 2 tablespoons yogurt
* 1/2 tea glass olive oil
* 2 cloves garlic
* 1 teaspoon each tomato paste and pepper paste
* Paprika, isot (Urfa pepper flakes), thyme, black pepper, salt
Instructions:
Grease a baking tray with about 1 teaspoon of butter. Arrange the sliced potatoes at the bottom of the tray. Add the sliced onions and peppers on top.
In a bowl, mix all the sauce ingredients. Add the chicken pieces into the sauce and coat well. If you have time, let it marinate for about 2 hours, but you can also cook it right away if needed.
Place the marinated chicken over the vegetables. You can optionally add extra garlic or tomato pieces between the layers.
Cover the dish with a piece of baking paper that has been wet and squeezed out.
Bake in a preheated oven at 200°C (about 400°F). When the chicken is almost cooked, remove the baking paper and continue baking for a little longer until everything is nicely browned.
Enjoy! 🍽️
In my experience, a tray bake like this one offers not only convenience but also a wonderful way to blend flavors effortlessly. Using boneless chicken thighs ensures the meat stays juicy and tender, and the combination of paprika and isot (Urfa pepper flakes) adds a subtle smoky heat that complements the natural sweetness of the roasted vegetables. For best results, I recommend slicing the potatoes to a uniform thickness so they cook evenly along with the chicken. Also, marinating the chicken for at least two hours really infuses the dish with vibrant flavor, but if you're short on time, you can bake it right away and still get a tasty result. I usually add an extra clove of garlic to the sauce for a stronger aroma and sometimes layer in fresh tomato slices between the chicken and veggies for added moisture and tanginess. Covering the tray with wet baking paper during the initial baking phase keeps everything moist and helps the flavors meld beautifully. Removing the cover near the end lets the chicken and vegetables brown nicely, achieving an appealing texture and color. This recipe is quite adaptable: you can switch the peppers for other vegetables like zucchini or carrots, or adjust the spices to your liking. Paired with a fresh salad or crusty bread, it makes a wholesome dinner suitable for any day of the week. The balance of protein, carbs, and veggies makes it both satisfying and nourishing, perfect for those who enjoy a flavorful one-pan meal with minimal cleanup.
