Put the meat in the pot with chopped onions and bell peppers and a small bit of water, let it simmer and brown on high so the meat can soak up the seasonings. Then add more water to cover the meat and lower the fire to medium low and let it cook until tender. I added the vegetables to cook with the meat. Then used Mccormick gravy and let it boil until it thickened.

If you’ve been searching for a delicious rice, meat, and veggies combination, this recipe is a total winner. One of the keys to a truly amazing beef stew is making sure the meat is incredibly tender. While the original recipe mentions simmering until tender, a little trick I've learned is to brown the beef really well first to lock in the flavor. Then, if you have the time, letting it simmer on low for an extended period (think 2-3 hours) can make all the difference. Some days, I even use my slow cooker after browning – just toss everything in and let it do its magic for 6-8 hours on low. The beef practically melts in your mouth! For the seasoning, using a mild jerk seasoning gives it that fantastic Caribbean twist without being overwhelmingly spicy, which is perfect for a family meal. I love to build layers of flavor by adding a mix of spices like Sazon, paprika, and Goya total seasoning alongside the fresh onions and bell peppers. These ingredients work together to create a deeply savory and aromatic base for the stew. Don’t be shy with the garlic and herb blend either; it really brightens up the whole dish.
