Easy Summer Microwave Brunch

No sponsorships, no sales pitch, just sharing what works for me.

I deal with a lot of back pain, so traditional cooking isn't always practical. One thing I've learned is that microwave cooking can be a huge help, especially during the summer when I don't want to heat up the whole house.

Today's brunch was simple, filling, and honestly delicious.

🍳 Eggs

I used my Tupperware MicroDelight. I cracked in two eggs per person (and got a bunch of double yolks today 🥰), added a little squeeze butter, salt seasoning, and parsley, put the cover on, and microwaved for 5 minutes.

🌶️ Jalapeño Sausages

I cooked 6 sausages in my RangeMate with a couple tablespoons of water. Microwaved for 5 minutes, turned them over, then another 5 minutes.

They were really good, but definitely spicier than the sausages I normally buy. Me and the girls thought they had quite a kick! Tasty, but probably not something I'll buy again for us because we're not used to that much heat.

I seriously hope they bring this flavor back every year because it is one of my absolute favorites. It's so good.

We skipped breakfast this morning, so this ended up being more of a brunch than anything. The girls loved it, I loved it, and nobody complained about the food, which is always a win. 😊

Microwave cooking may not be everyone's thing, but it helps me get good food on the table with less pain, less cleanup, and without heating up the house. For our family, that's a huge win.

Don’t underestimate the joy of pairing a well-thought-out brunch with a favorite beverage like Dr Pepper Zero Creamy Coconut, especially when it’s a seasonal favorite. For those managing pain or mobility issues, microwave cooking isn’t just convenient; it’s empowering, allowing you to prepare meals independently without taxing your energy.
