You'll need:

For Mofongo:

3 medium Plantains Use green or slightly yellow for best texture.

4 cloves Garlic Fresh, minced garlic is essential for flavor.

4 tablespoons Olive oil or Butter 2-3 tablespoons for mofongo and 2 for cooking shrimp.

1 cup Chicharrón (Pork Cracklings)

For Shrimp:

1 pound Medium Shrimp Peeled and deveined.

to taste Salt

to taste Pepper

Cooking:

Peel and slice the plantains into 1-2 inch pieces. Boil them in salted water for about 10-15 minutes until tender.

Using a pilón, mash the cooked plantains with minced garlic, olive oil, and chicharrón until smooth yet slightly chunky. Season with salt and pepper.

In a skillet, heat butter or olive oil over medium heat. Sauté minced garlic until fragrant, then add shrimp, seasoning lightly with salt and pepper. Cook for about 3-4 minutes per side, until pink and opaque.

Mold the mofongo onto plates, top with garlic shrimp, and drizzle pan juices over the top.

Serve garnished with fresh cilantro or lime wedges for added brightness
