The extraction continues, and your coffee can become over-extracted and bitter. Pour all the coffee into a separate carafe or directly into your mug. Finally, a quick word on cleaning. A clean French press is essential for a consistently great brew. I make sure to rinse mine thoroughly after every use, and occasionally give it a deeper clean with warm soapy water to remove any coffee oils that might build up.
