How I implement “ Eating The Rainbow” in My Daily Routine:

When creating a meal I always aim to fill my plate with various colorful plant foods. The goal is not just making it look beautiful, it’s nourishing my body with a wide range of vitamins, antioxidants, and protective plant compounds. 🍏

Each color comes from a unique pigment that offers specific health benefits. Together, they support the immune system, digestion, and energy levels, and help long-term wellness. 🥒

I also love rotating the colors by using seasonal produce as I find it a perfect way to reflect the current mood with the changes of seasons. 🫐

That’s also another reason why I follow the Mediterranean Diet eating pattern as it focuses on a wide variety of legumes, fruits and veggies 🥕

Here’s a perfect example of a Mediterranean Diet Chicken Rainbow Plate:

🥬 Greens (spinach, cucumbers, pepperoncini) — detox + immune support

🍅 Reds (cherry tomatoes, pickled red onions) — heart + skin health

🧡 Orange/Yellow (tomatoes) — eye health + inflammation support

🩷 Pink (Radishes) — natural detox + digestion

🥣 Tan ( Lentils) — fiber, iron, and blood sugar control

✨ The more colors you eat, the more protection you give your body. It’s not about perfection — it’s about variety.

👩‍⚕️ As a dietitian, I aim to get 3+ different colors on my plate daily. It’s one of the easiest ways to eat for long-term health.

For example, the vibrant cherry tomatoes in my rainbow plate are packed with Vitamin C and lycopene, a potent antioxidant known for its sun-protective qualities and ability to give skin a natural glow. The *pickled red onions*, with their rich purple hue, contain quercetin, an anti-inflammatory compound that can help soothe skin and reduce redness. Even humble radishes support natural detoxification, which is key for clear, healthy skin. By consciously adding a variety of colors, you’re essentially feeding your skin from the inside out, helping it repair, rejuvenate, and maintain its youthful elasticity. I’ve personally noticed such a difference in my complexion since I started prioritizing these vibrant foods – it’s truly a game-changer! Boost Your Gut Health with Spinach & Greens When it comes to gut health, fiber is your best friend, and greens like spinach are superstars! Spinach is loaded with insoluble fiber, which acts like a broom, sweeping through your digestive tract and promoting regularity. This helps prevent constipation and supports a healthy gut microbiome by providing prebiotics that nourish beneficial gut bacteria. Beyond fiber, spinach also offers essential vitamins and minerals that support the integrity of your gut lining. Together with hydrating *cucumbers*, which are excellent for flushing toxins and maintaining fluid balance, these greens create an optimal environment for digestion. Adding greens to every meal is one of the easiest habits to adopt. I love sneaking spinach into my smoothies, scrambling it with eggs, or simply wilting a big handful into pasta sauces or stir-fries. My digestion has never been smoother, and I attribute a lot of it to making sure I get my daily dose of these fantastic greens. Nourish Your Heart with Lentils and Legumes For a healthy heart, lentils are an absolute powerhouse that often get overlooked. These humble legumes are incredibly rich in soluble fiber, a type of fiber that can help lower LDL (bad) cholesterol levels by binding with cholesterol in the digestive tract and ushering it out of the body. Furthermore, lentils are a great source of potassium and magnesium, two minerals crucial for maintaining healthy blood pressure. Their low glycemic index also means they help stabilize blood sugar, which is important for overall cardiovascular health. The OCR mentioned their benefits for heart health, blood sugar control, and anti-inflammatory properties, all of which contribute to a strong, healthy heart. I regularly incorporate lentils into my diet through hearty soups, stews, or even as a base for veggie burgers. They’re affordable, versatile, and knowing they're doing wonders for my heart makes them a pantry staple I can’t live without. Making simple swaps, like using lentils in place of some meat, can significantly boost your heart-healthy nutrient intake.
