Ublay Anday Ka Salan (Boiled Egg Curry)
Slightly Spicy | Indian, Pakistani, and Bangladeshi Style
Ingredients for the dish
* 9 boiled eggs (peeled and halved or sliced)
* 1 large onion (peeled and finely chopped)
* 1 tsp fresh ginger paste
* 5 to 6 cloves fresh garlic (peeled and minced)
* 1 medium tomato (chopped)
* ½ tsp tomato paste
* ¾ tsp salt (or to taste)
* 1 tsp Garam Masala
* 1 tsp cumin seeds (Zeera)
* ½ tsp black seeds (Kalonji)
* 1 tsp all-purpose seasoning powder
* ½ tsp turmeric powder (Haldi)
* ½ tsp cayenne pepper powder (Lal Mirch)
* 3 tbsp olive oil (for cooking)
* 1 cup water (adjust for desired gravy consistency)
* Handful of fresh cilantro (washed and chopped for garnish)
Instructions as follows:
1. Sauté the Aromatics: Heat the olive oil in a pan over medium heat. Add the chopped onions, cumin seeds, and kalonji. Sauté until the onions turn a rich golden brown.
2. Prepare the Base: Add the ginger paste, garlic, chopped tomatoes, tomato paste, and all dry spices (salt, Garam Masala, seasoning powder, turmeric, and cayenne).
3. Simmer the Gravy: Pour in 1 cup of water and stir well. Allow the sauce to simmer until the ingredients are well-combined and the oil begins to separate from the gravy.
4. Incorporate Eggs: Taste the sauce and adjust the salt if necessary. Gently fold in the pre-cut boiled eggs.
5. Garnish and Serve: Garnish with plenty of fresh cilantro. Serve hot with Naan, Roti, or a fresh garden salad.
