Mississippi Pot Roast Sandwich Recipe

Ingredients:

1 (3 pound) chuck roast

1/2 (12 ounce) jar sliced pepperoncinis or banana peppers + 1/2 of the juice (note: I like to use the italian seasoned ones when I can find them)

1/2 cup unsalted butter

1 packet au jus gravy mix

1 packet ranch dressing mix

salt

ground black pepper

sub buns

sliced provolone

mayonnaise

chips (optional)

pickles (optional)

Directions:

1) Combine the chuck roast, salt, black pepper, pepperoncinis or banana peppers + juice, au jus gravy mix, ranch dressing mix, and butter in a slow cooker.

2) Cover and cook on low for 8 hours or until roast is fork-tender.

3) Use two forks to shred the roast in the slow cooker.

4) Spread mayonnaise onto the insides of the sub buns and add sliced provolone. Lay sub buns flat/open in a toaster oven and toast until the provolone is melted.

5) Add pot roast to sub buns and serve warm with chips and pickles, if desired.
