High-Protein Crockpot French Dip Sandwich 🥖

Beef

• 4 cloves garlic, minced

• 1 medium onion, sliced

• ½ tsp black pepper

• 1 bay leaf

Sandwich

• 4–6 whole grain hoagie rolls or high-protein sandwich rolls

• 4–6 slices reduced-fat provolone or Swiss

• Optional: sautéed onions or mushrooms

High-Protein Horseradish Sauce

• ½ cup plain non-fat Greek yogurt

• 1 tbsp prepared horseradish

• 1 tsp Dijon mustard

• squeeze of lemon juice

• pinch salt & pepper

Instructions

1️⃣ Prepare the Beef

1. Place sliced onion in the bottom of the crockpot.

2. Add the roast on top.

2️⃣ Make the Au Jus

Whisk together:

• beef broth

• water

• Worcestershire

• soy sauce

• Dijon

• garlic

• spices

Pour over the roast and add the bay leaf.

3️⃣ Slow Cook

Cook:

• LOW: 8 hours

or

• HIGH: 4–5 hours

The beef should shred easily with a fork.

4️⃣ Shred the Meat

Remove the roast and shred it with two forks.

Return the shredded beef to the crockpot and let it soak in the juices for 10–15 minutes for maximum flavor.

5️⃣ Toast the Sandwich

1. Preheat oven to 375°F.

2. Fill rolls with beef.

3. Top with reduced-fat provolone.

4. Bake 3–5 minutes until cheese melts.

6️⃣ Serve with Au Jus

Strain some of the crockpot liquid into small bowls for dipping.

Add Greek yogurt horseradish sauce to the sandwich if desired.
