Chicken Enchiladas Recipe
For Sauce:
3 tsb unsalted butter
3 tsp Flour
1 1/2 cup low sodium chicken broth
1 cup sour cream
1tsp pepper, garlic & onion powder
Pinch of salt (use your own preference)
1/2 fresh jalapeño chopped
1 tsb cilantro
For chicken
Boil two chicken breast in a pot of water until cooked. Include half and onion, 2 cloves of garlic and 1tsb of jalapeños from a jar with 2 tbs of the juices. Cook for about 15-20 min on medium low heat.
Cheese
1 1/2 cup of extra sharp cheddar
1 cup pepper jack
Once chicken is cooked. Transfer just the chicken to a separate bowl and shred.
Season with 1tsp of onion powder, garlic powder, pepper, and salt.
Add in 1tsb of canned jalapeños, 1tsb cilantro and about half of the cheese. Combine well.
Stuff 6-8 flour tortillas with filling
