1 10-12 ounce bag tortilla chips, crushed (I didn't use the whole bag)
1 can Ro-tel tomatoes
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 package taco seasoning
1 can cream of chicken soup
1/2 cup water
sour cream and salsa for serving
Directions:
Preheat oven to 325 degrees. In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup and water. Simmer over medium-low heat until everything is well combined and heated through.
Grease a 9×13 casserole dish. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Cover with foil and bake for 20-30 minutes, or until bubbly.
Let sit for 5-10 minutes before serving. Top with sour cream and salsa.

... Read moreOkay, so you've got the basic recipe for this amazing Mexican Beef Casserole with Tortilla Chips, but let me share a few of my personal tips and tricks to make it even more epic!
First off, don't underestimate the power of good quality tortilla chips. While the recipe says to crush them, I like to leave some slightly larger pieces for extra crunch. It’s all about that texture contrast! And if you're worried about soggy chips, a little secret is to lightly toast your crushed chips in the oven for about 5-7 minutes before layering. This helps them hold their integrity against the moist meat mixture. Trust me, nobody wants a mushy casserole!
When it comes to the beef mixture, browning your ground beef until it's really well-cooked and draining off all the fat is crucial. This prevents your casserole from becoming greasy. I also love to add a pinch more chili powder or a dash of smoked paprika to the meat if I'm feeling extra spicy – it just deepens those Mexican flavors!
Now, let's talk toppings! The recipe lists sour cream and salsa, which are classics, but I always take it a step further. Inspired by those delicious images, I love to add a sprinkle of freshly diced red onions and tomatoes right before serving for a burst of freshness. For a little kick, thinly sliced jalapeños (fresh or pickled!) are a game-changer. And don't forget shredded lettuce – it adds a delightful coolness and crunch that balances out the richness of the casserole. Sometimes, I even dollop on some homemade guacamole. It really turns it into a full fiesta on a plate!
This casserole is truly a weeknight lifesaver for my family. It’s so easy to prep, and honestly, the leftovers are just as good, if not better, the next day. If you're planning ahead, you can assemble the whole casserole (without the sour cream and salsa, of course) and store it in the fridge for up to 24 hours before baking. Just add an extra 10-15 minutes to the baking time if it's going in cold.
Feeling adventurous? You can totally customize this recipe. Swap out the ground beef for ground turkey for a lighter version, or add a can of drained black beans to the meat mixture for extra fiber. Different cheeses work wonders too – a Monterey Jack or a Colby Jack blend would be delicious. It's such a versatile dish, perfect for feeding a crowd or just enjoying a cozy night in. Give these tips a try, and let me know how your Mexican beef and tortilla chip casserole turns out!
