Rice Salad & Beef Bites 🥗 Summer Meal

☀️ This rice salad and beef bites combo has become one of my favorite meals for hot days! It’s refreshing, filling, packed with protein, and so easy to make. I love that it uses simple ingredients I usually already have at home, and it tastes even better when the rice is nice and cold. If I made it again, I might add some fresh herbs or a squeeze of lemon for extra freshness. 🥗🥩

✨ Ingredients

For the beef bites:

• 1 lb ground beef

• 1 onion, finely diced

• 1 garlic clove, minced

• Salt & pepper

• Paprika

• Onion powder

• Garlic powder

• 1 tsp breadcrumbs

• A drizzle of oil

For the rice salad:

• Cooked and chilled rice

• 1 can corn

• 1 tomato, diced

• ½ cucumber, diced

• tuna

• 2 tbsp mayonnaise

• 1 tbsp olive oil

• Salt & pepper

✨ Instructions

1. In a large bowl, combine the ground beef, diced onion, seasonings, minced garlic, breadcrumbs, and a drizzle of oil. Mix well. (P-2/3)

2. Shape the mixture into small elongated beef bites using your hands. (P-5)

3. Cook in a pan with a drizzle of oil until browned and fully cooked through. (P-6)

4. In a separate bowl, combine the chilled rice, corn, tomato, tuna, and cucumber. (P-7)

5. Add the mayonnaise, olive oil, salt, and pepper. Mix until everything is well combined. (P-8)

6. Serve the rice salad with the beef bites and enjoy!
