I wanted to share a few more tips and tricks to make this amazing crispy potato and scrambled egg bowl even better and more integrated into your routine, especially if you're looking for simple meal prep ideas or a satisfying breakfast plate! For those wondering how to get those potatoes *just right*, I've found a few tricks. Using an air fryer, as I did, is seriously a game-changer for achieving perfectly crispy diced potatoes without a ton of oil. If you don't have one, don't worry! You can toss them with olive oil and roast them in a hot oven (around 425°F/220°C) for about 30-35 minutes, flipping halfway. A little secret for extra crispness is to soak your diced potatoes in cold water for 20-30 minutes, then drain and pat them completely dry before seasoning and cooking. This removes excess starch, which makes all the difference in achieving that golden, crunchy texture! Making this a 'simple potato egg meal prep' staple is easier than you think. You can air fry a larger batch of crispy diced potatoes at the beginning of the week and store them in the fridge. They reheat surprisingly well in the air fryer or a pan, staying delicious. Then, in the morning, all you need to do is quickly whip up your scrambled eggs and assemble. This saves so much time, especially on those hectic weekday mornings when you want a nutritious breakfast without the fuss. I often chop my potatoes the night before too, so they’re ready to go straight into the air fryer when I wake up. And what about turning this into an even more exciting 'simple potato and egg breakfast plate'? Beyond the classic red ketchup and cottage cheese, I sometimes like to add a sprinkle of fresh chives or green onions for a pop of color and flavor. A dash of hot sauce can also elevate the taste if you like a little kick! For extra veggies, you could sauté some spinach or bell peppers and mix them into your scrambled eggs or serve them on the side. A sprinkle of shredded cheese on top of the warm eggs as they finish cooking melts perfectly. The beauty of this dish is its versatility – you can truly make it your own and customize it based on what you have in your fridge or what you're craving. For anyone still asking 'what is this' amazing meal? It's simply a powerhouse of nutrition designed to fuel your day! The combination of complex carbs from the crispy diced potatoes and high-quality protein from the scrambled eggs makes it incredibly satisfying and perfect for sustained energy, whether you've just finished a run or are simply getting ready for a busy day ahead. It’s my go-to secret weapon for staying full and energized without feeling heavy, and it's surprisingly quick – from chopping to bowl, it’s usually less than 30 minutes for me!
