Pumpkin Snickerdoodles | Soft & Spiced

Pumpkin + snickerdoodle = fall cookie perfection. Soft, chewy, and rolled in cinnamon sugar!

Ingredients:

• ½ cup butter, softened

• ½ cup pumpkin purée

• 1 cup sugar

• 1 egg

• 1 tsp vanilla

• 2 cups flour

• 1 tsp baking soda

• 1 tsp cream of tartar

• 1 tsp cinnamon

• ½ tsp nutmeg

• Cinnamon sugar (for rolling)

Directions:

1. In a bowl, beat butter, pumpkin, sugar, egg, and vanilla until creamy.

2. In another bowl, whisk flour, baking soda, cream of tartar, cinnamon, and nutmeg.

3. Mix dry ingredients into wet until a dough forms.

4. Roll dough balls in cinnamon sugar.

5. Place on baking sheet and bake at 350°F for 10–12 minutes, until edges are set.

6. Let cool slightly before serving.
