Chewy Pumpkin Snickerdoodle Cookies 🎃🍪

Ingredients:

For the Cookies:

•⁠ 2 3/4 cups all-purpose flour

•⁠ 1/2 teaspoon baking powder

•⁠ 1/2 teaspoon baking soda

•⁠ 1/2 teaspoon salt

•⁠ 1 teaspoon ground cinnamon

•⁠ 1/2 teaspoon ground nutmeg

•⁠ 1/4 teaspoon ground cloves

•⁠ 1/2 cup unsalted butter, softened

•⁠ 1/2 cup granulated sugar

•⁠ 1/2 cup brown sugar

•⁠ 1/2 cup pumpkin puree

•⁠ 1 large egg

•⁠ 1 teaspoon vanilla extract

For the Cinnamon-Sugar Coating:

•⁠ 1/4 cup granulated sugar

•⁠ 1 teaspoon ground cinnamon

Directions:

1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.

2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the pumpkin puree, egg, and vanilla extract until well combined.

3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Cover the dough and chill in the refrigerator for at least 30 minutes.

4. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

5. In a small bowl, mix together the cinnamon and sugar for the coating.

6. Scoop 1 1/2 tablespoons of chilled dough and roll into balls. Roll each ball in the cinnamon-sugar mixture to coat.

7. Place the cookie dough balls on the prepared baking sheet about 2 inches apart.

8. Bake for 10-12 minutes, or until the edges are set and the centers are still soft. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
