... Read moreI’ve found that preparing a pasta salad in a jar is one of the best ways to enjoy a quick, nutritious meal without spending too much time in the kitchen. Using rotini pasta is great because its spiral shape holds onto the Italian dressing beautifully, ensuring every bite is flavorful. Adding a crunchy mix of cucumber, tomatoes, red onion, and banana peppers gives the salad a lovely burst of freshness and texture. One tip I’ve learned is to layer the dressing at the bottom of the jar and keep the vegetables above it, so the salad stays crisp longer. When you’re ready to eat, just shake the jar or dump everything into a bowl and toss it together. Including boiled eggs adds a nice protein boost, making this meal both filling and satisfying. What makes this salad even more versatile is how you can customize it easily. For a vegan twist, simply omit the eggs or replace them with chickpeas or tofu. Mushrooms add an earthy depth that pairs perfectly with the tangy Italian dressing, but you can experiment with other veggies or even add some olives for extra flavor. This salad is perfect for those busy days when you want a homemade meal without the hassle. It stores well in the fridge for a few days, making it a great option for weekday lunches or picnics. Plus, the jar presentation makes it portable and mess-free. I always make a few jars ahead of time, and it saves me from making unhealthy food choices when I’m rushed. Overall, pasta salad in a jar is a delicious, practical, and healthy meal prep idea. It’s filling, colorful, and packed with nutrients. Give it a try, and enjoy the convenience and taste it brings to your meal routine!
