Sourdough journey

Recipe for cheddar jalapeño loaf 👇🏼

•50g starter

•350g water

•500g bread flour

•10g salt

•70g fresh or pickled jalapeño

•113g freshly shredded cheddar cheese

•mix water and starter thoroughly

•add flour and salt, mix until you create your dough

•cover and rest 30 minutes

•stretch and fold every 30 minutes-4x

•add inclusions on last stretch and fold

•let ferment at room temperature for 6-8 hours or until doubled in size

•shape and rest for 30 minutes

•cold proof over night up to 72 hours

•place in freezer 30 before baking to help with scoring

•place Dutch Oven inside of oven for and preheat to 450

•bake for 30 minutes covered, 15-20 minutes uncovered

•let cool and enjoy 🧀🍞
