How did I get here as a beginner? At first I was having issues with getting it to rise and having the right consistency. I talked to a friend and we decided on the 1:10:10 ratio. I did 32g starter, 320g flour, 320g water (I never use all of the water it calls for). Now that I have an overflow I switched it up, I decided to do 10g starter, 100g flour/water. The second picture is where I am today, should I keep this ratio going or should I switch it up?
