❇️ Vegan Baked Oatmeal [With Berries]

Healthy one-pan vegan baked oatmeal with mixed berries is a low-fuss, cozy, comforting, and nourishing make-ahead breakfast or brunch with a soft middle and crisp golden crust! + gluten-free, egg-free, dairy-free, and sugar-free!

🔸Ingredients

▢ 3 ripe bananas, peeled

▢ 1 ½ cups plant-based milk

▢ 1 teaspoon of cinnamon

▢ 1 teaspoon of vanilla extract

▢ 2 cups old-fashioned rolled oats

▢ 1 pint of blueberries, reserve some for garnish

▢ 2 cups of strawberries, thickly sliced, reserve some for garnish

▢ Nuts or granola for garnish (optional

🔸Instructions

Preheat the oven to 350 degrees F. and grease a 9×9 baking dish.

Place the bananas on the baking pan and mash them well. Add the plant-based milk, cinnamon, and vanilla extract. Mix well and stir in the oats.

Fold in the berries and bake for 30 minutes.

Remove from the oven and allow it to sit for 30 minutes.

Serve and top with more berries and sprinkle of cinnamon. 😊😘
