Spaghetti Squash
Trying to eat a little lighter without giving up comfort food? This spaghetti squash recipe was so good and packed with flavor! 🤍✨
What I used:
• 1 spaghetti squash
• Mushrooms (as my meat alternative 🍄)
• Onion
• Green bell pepper
• Basil spaghetti sauce
• Parmesan cheese
• Italian seasoning
• Garlic powder
• Black pepper
How I made it:
1. Cut the spaghetti squash in half and remove the seeds.
2. Season and roast until tender.
3. While it baked, I used my food processor to finely chop the onions and green bell peppers.
4. Sautéed the mushrooms, onions, and bell peppers until soft and flavorful.
5. Added basil spaghetti sauce and let everything simmer together.
6. Scraped the spaghetti squash into strands and topped it with the sauce mixture.
7. Finished with Parmesan cheese, Italian seasoning, and a little black pepper.
8. Baked until the cheese melted and became golden.
