Ingredients:
1 lb ground beef
1/2 lb smoked sausage, sliced
1 can (15 oz) diced tomatoes
1 can (15 oz) pinto beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 medium onion, chopped
2 cloves garlic, minced
3 cups beef broth
1 can (10 oz) diced tomatoes with green chilies
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional for heat)
2 tablespoons olive oil
1/4 cup fresh cilantro, chopped (for garnish)
Directions:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
Add the smoked sausage slices, chopped onion, and minced garlic to the pot. Cook for 5 minutes, stirring occasionally, until the onion is softened.
Stir in the diced tomatoes, pinto beans, black beans, corn, and diced tomatoes with green chilies.
Pour in the beef broth and add the chili powder, ground cumin, paprika, salt, black pepper, and cayenne pepper (if using). Stir well to combine.
Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.
