Strawberry Brownies 🍓

Ingredients:

16 oz fresh or frozen strawberries 🍓

3/4 cup unsalted butter 🧈

1 cup chopped white chocolate 🍫

1 1/4 cups granulated sugar 🍬

1 large egg 🥚

2 large egg yolks 🥚

2 1/4 cups all-purpose flour 🌾

1/4 tsp salt 🧂

For the Ganache:

2 tbsp strawberry puree 🍓

1 tbsp heavy cream 🥛

3/4 cup chopped white chocolate 🍫

Instructions:

Make Strawberry Puree: Chop strawberries and blend until smooth. Simmer the puree on medium heat for about 20 minutes until reduced to 2/3 cup. Let cool.

Brownie Batter: Preheat oven to 350°F (175°C). Grease and line an 8×8” square pan with parchment paper. Melt butter and white chocolate together. Mix in sugar and strawberry puree. Add egg and yolks, then fold in flour and salt.

Bake: Pour the batter into the prepared pan, smooth the top, and bake for 40 minutes or until a toothpick comes out clean. Cool completely.

Strawberry Ganache: Heat strawberry puree and cream, then pour over chopped white chocolate. Stir until smooth, adding more cream if needed. Spread ganache over cooled brownies.

Slice & Serve: Let the ganache set, then cut into squares and enjoy
