Seafood-Stuffed Potatoes 🥔🦐

INGREDIENTS

Potatoes

◻ 4 baking-size Russet potatoes

◻ 8 oz cream cheese, softened

◻ 1 tbsp garlic powder

◻ Chives or green onions (for garnish)

◻ Salt and pepper to taste

Seafood

◻ 1 lb crawfish tails, drained of fat

◻ 1 lb raw shrimp, peeled and deveined

◻ 2 tbsp Cajun seasoning, divided

◻ 2 tbsp onion powder, divided

◻ 2 tbsp liquid crab boil, divided

Sauce

◻ 1 stick butter, divided

◻ 2 tbsp minced garlic

◻ 4 tbsp flour

◻ 2 ½ cups half and half

◻ 2 cups shredded American cheese (Velveeta)

◻ 1 cup shredded mozzarella, plus extra for topping

◻ ½ cup shredded Monterey Jack

◻ ¼ cup grated Parmesan cheese

INSTRUCTIONS

Potatoes:

❶ Wash, scrub, and dry potatoes thoroughly. Use a fork to poke small holes all over each potato.

❷ Cook:

Oven method: Wrap in foil and bake at 400°F for 40-50 minutes.

Microwave method: Wrap in paper towels and cook individually using the “potato” setting (or HIGH for 5 minutes, flip, then cook 3-5 minutes until fork-tender).

❸ Once cooked, slice down the middle of each potato without cutting through the bottom. Scoop out the insides into a bowl, reserving the potato skins.

❹ Mash the scooped potato with cream cheese, garlic powder, salt, and pepper. Cover and keep warm.

Seafood & Sauce:

❶ Season shrimp and crawfish with 1 tbsp Cajun seasoning, 1 tbsp onion powder, and 1 tbsp liquid crab boil.

❷ In a saucepan, melt 4 tbsp butter and sauté minced garlic for 30 seconds. Add seasoned shrimp and crawfish, cooking until shrimp are pink and opaque (about 4-5 minutes). Remove seafood and reserve the cooking liquid.

❸ In the same pan, melt the remaining butter. Whisk in flour and cook for 1 minute. Gradually whisk in the reserved seafood liquid and half and half. Simmer on low.

❹ Stir in 1 tbsp Cajun seasoning and 1 tbsp onion powder. Add all cheeses and stir until melted and smooth. Return the seafood to the sauce and heat through.

Assemble:

❶ Spoon the potato mixture back into the reserved potato skins. Top with extra mozzarella cheese.

❷ Ladle the seafood sauce generously over each stuffed potato.

❸ Garnish with chives or green onions and serve!
