Mini Cinnamon Roll Cheesecakes 🍰✨
Ingredients:
For the Crust:
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon ground cinnamon
For the Cinnamon Swirl:
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, melted
For the Topping:
- Whipped cream
- Ground cinnamon (for dusting)
Directions:
Prepare the Crust:
1. Preheat your oven to 325°F (160°C).
2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
3. Press the mixture firmly into the bottom of 12 mini cheesecake pans or silicone molds to form an even crust. Set aside.
Prepare the Cheesecake Filling:
4. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
5. Add the granulated sugar and vanilla extract, mixing until well combined.
6. Add the eggs one at a time, mixing well after each addition.
7. Stir in the sour cream and ground cinnamon until fully incorporated.
Make the Cinnamon Swirl:
8. In a small bowl, mix together the brown sugar, ground cinnamon, and melted butter until it forms a paste.
Assemble the Cheesecakes:
9. Spoon the cheesecake filling evenly over the prepared crusts in the mini cheesecake pans or molds.
10. Drop spoonfuls of the cinnamon swirl mixture on top of the cheesecake filling and use a toothpick or knife to gently swirl it into the filling for a marbled effect.
11. Bake in the preheated oven for 20-25 minutes, or until the edges are set but the center is slightly jiggly.
12. Turn off the oven and leave the cheesecakes inside for an additional 10 minutes. Then, remove from the oven and allow to cool completely.
Chill and Serve:
13. Once cooled, refrigerate the cheesecakes for at least 4 hours, or until fully set.
14. Before serving, top each cheesecake with a dollop of whipped cream and a dusting of ground cinnamon.
