Crispy Fried Calamar

Main Ingredients:

500 grams fresh squid (peeled, cleaned, and cut into rings)

1 tbsp lime juice

½ tsp salt

½ tsp ground pepper

Dry Flour Mixture:

150 grams all-purpose flour

2 tbsp cornstarch (for extra crispiness)

½ tsp baking powder

½ tsp salt

½ tsp ground pepper

(optional) ½ tsp powdered broth

Wet Batter:

1 egg

3 tbsp ice water

Instructions:

Marinate the squid:

Coat the squid rings with lime juice, salt, and pepper. Let it rest for 15 minutes, then drain well.

Prepare two bowls:

Bowl 1: Combine all the dry flour mixture ingredients.

Bowl 2: Whisk the egg with the ice water.

Coat the squid:

Dredge the squid in the dry flour mixture → dip into the egg wash → dredge again in the dry flour mixture, pressing down lightly to make sure the flour sticks and creates a "curly" texture.

Fry:

Heat plenty of oil in a pan. Fry the calamari over medium heat until golden brown and crispy (about 2-3 minutes).

Remove and drain on paper towels.
