Buffalo Chicken Stuffed Cucumbers

Ingredients:

1 large cucumber

1 cup shredded rotisserie chicken

2 tbsp whipped cream cheese

1 tbsp light mayo (optional for extra creaminess)

2 tbsp Frank’s RedHot (or any sugar-free buffalo sauce)

1 tbsp light ranch dressing or ranch seasoning

2 slices cooked turkey bacon, crumbled

Salt & pepper to taste

Instructions:

In a bowl, combine shredded chicken, cream cheese, mayo, buffalo sauce, ranch, and half the crumbled bacon. Mix until creamy and well-blended.

Slice cucumber in half lengthwise, then scoop out the center to create “boats.”

Spoon the buffalo chicken mixture evenly into each cucumber half and press gently.
