Sourdough discard pretzels
Ingredients
- 1 cup and 2 tbsp warm water
- 1 tbsp brown sugar
- 1 and 1/4 tsp active yeast
- 200 g sourdough discard
- 4 cup AP flour
- 1 tsp salt
- 4 tosp melted butter
- 2/3 cup baking soda
- 1 egg yolk & 1 tbsp water
Instructions:
- mix warm water and brown sugar in a bowl
- sprinkle yeast on top and let it sit for a few minutes or until its foaming
- Add your discard, flour, and salt with the dough hook attachment and mix on low speed.
- while mixing add your butter and increase speed to medium and knead for 3-5 minutes
-place dough in a oiled bowl and let it rest for 60-90 minutes
- after your dough has risen, dump it out and cut it into 8 larger pretzels or 16 smaller ones.
- shape your pretzels and place them on a parchment lined cookie sheet
- preheat your oven to 450°F and bring 10 cups of water and your baking soda to a boil
- place your pretzels in the water for 30 seconds each side (they should float)
- place them back on the cookie sheet after boiling and brush with egg wash and flaky salt
- bake at 450°F for 13-15 minutes until golden brown
