I’m always looking to create recipes to make my work week easier. These tandoori style chicken tikka skewers are one of my favorites, I like to meal prep these on Sunday and cook them during the week for an easy dinner or lunch. They are so good on their own with white rice or you can serve with chutney or raita. Also great for wraps. Make sure to give this one a try!
- 8 - 10 bamboo skewers
- 1.5 pounds boneless and skinless chicken thighs, cubed
- 1 teaspoon salt
- 1 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 3/4 teaspoon cumin powder
- 2 teaspoons coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon black pepper
- 1 tablespoon fenugreek leaves (optional)
- 1/2 cup plain or greek yogurt
- 1 1/2 tablespoons ginger garlic pasta
- 1 tablespoon oil
- 1 tablespoon lemon juice (1/2 lemon)
- 1 medium red onion, quartered
- 1 bell pepper or mini peppers, cut into chunks
- 2 tablespoons butter, melted
- Cilantro, chopped finely
Directions:
1. Clean and prep the chicken thighs. Add to a bowl. Combine with spices, yogurt, ginger garlic paste, oil, and lemon juice. Mix well and marinate for 4 hours or overnight for maximum flavor.
2. Prep by cutting up the onion and bell peppers. Soak bamboo skewers for 30 minutes.
3. Preheat the air fryer. Skewer the chicken pieces, onion, and bell peppers alternately onto each bamboo skewer equally.
4. Cook a few chicken skewers at a time, I did 2 at a time. Air fry at 400°F for 12 to 15 minutes or until fully cooked, turning in between.
5. Finish by brushing with melted butter and fresh cilantro. Serve immediately with fresh naan, white rice, chutney, and raita. Enjoy!
