Ep # 3: Air Fryer Chicken Satay Skewers w/ Peanut Sauce 🥜🍗

- 8 - 10 bamboo skewers (linked in my bio)

- 8 boneless and skinless chicken thighs (cubed into large pieces)

- 1/4 cup full fat coconut milk

- Knob of fresh ginger, minced

- 3 garlic cloves, minced

- 2 tablespoons reduced sodium soy sauce

- 1 tablespoon fish sauce

- 1 tablespoon brown sugar

- 2 1/2 teaspoons yellow curry powder

- 1 1/2 teaspoons turmeric powder

- 1/2 - 1 teaspoon red chili powder or cayenne pepper, depends on your spice level

- 1/2 teaspoon salt or more to taste

- 1/2 teaspoon black pepper

Peanut Sauce:

- 3 tablespoons peanut butter

- 1 tablespoon reduced sodium soy

- 2 teaspoons brown sugar

- 1 - 2 teaspoons chili garlic sauce, depending on spice level

- 1 garlic clove, minced

- Small knob of fresh ginger, minced

- 1/2 of lime, juiced

- 3 tablespoons hot water, add more until you receive desired consistency

Directions:

1. Start by soaking the bamboo skewers. Next, make the peanut sauce, refrigerate until later use.

2. In a large bowl, add cubed chicken, coconut milk, ginger, garlic, soy sauce, fish sauce, and spices. Mix well. Let it marinate for at least 4 hours.

3. Preheat the air fryer. Pile the chicken pieces onto each bamboo skewer equally.

4. Cook a few chicken skewers at a time, I did 3 at a time. Air fry at 400°F for 15 -18 minutes or until fully cooked, turning in between.

5. Serve immediately with a drizzle of peanut sauce and more to serve, chopped cilantro, cucumber slices, and fresh lime wedges. Goes great with whole rice. Enjoy!
