I’ve found that prepping the chicken by rinsing it in cold water and thoroughly seasoning with a combination of Chestnut Hill Cajun seasoning, Dash Garlic & Herb blend, and McCormick Mustard Ground delivers a bold and well-rounded flavor profile. These seasonings complement each other, giving a balanced heat, herbaceous freshness, and subtle tang. Stuffing the Cornish hen with quarters of white onion and jalapeno peppers adds incredible aroma and layers of moisture to the meat as it cooks. The jalapenos bring a nice kick without overwhelming, while the white onion caramelizes inside, enhancing sweetness. Cooking the chicken for about 45 minutes at 375°F in the air fryer—flipping halfway through—ensures crispy skin all around and juicy tender meat inside. One helpful tip is to allow the chicken to rest for a few minutes after cooking before cutting into it. This helps the juices redistribute for better moisture retention. The air fryer also speeds up cooking time compared to traditional rotisserie methods and keeps the kitchen cooler. This recipe is highly adaptable—you can swap jalapeno for milder peppers if preferred, or add garlic cloves for a deeper herb flavor. Serving with a fresh salad or seasoned rice makes for a satisfying meal perfect for weeknight dinners or weekend gatherings. I enjoy sharing this recipe with friends who love introducing easy, healthy, and vibrant dishes to their routine. It’s a quick way to bring the authentic taste of Cajun cuisine home using just a few simple ingredients and the magic of the air fryer.
