Try this skillet breakfast!

I love eggs but I hate frying or scrambling them. The second the egg starts sticking even a little bit I’m tempted to throw the pan out the window. This skillet breakfast is the best of both worlds - eggy goodness while also being super easy to clean.

You will need:

- 3 or 4 eggs

- 5 russet potatoes

- 1 tsp salt

- 1/4 cup shredded cheddar

- 1 package of bacon, any kind

- 2 tbsp olive oil or avocado oil

- parsley, oregano, onion powder, paprika, dill, OR Trader Joe’s Green Goddess and TJ’s Aglio Olio seasonings

- 2 tbsp butter

To make:

- wash and dice potatoes, patting dry

- in a cast iron, heat up 2 tbsp of oil. Add in potatoes and fry, making sure to brown all sides. Preheat oven to 400

- while potatoes are frying, add one tbsp of butter and your seasonings of choice

- fry bacon in a seperate pan and cut them into bitesized pieces.

- when potatoes are ready, add in bacon and mix.

- create wells where you will put the eggs. Cut a small pad of butter and put it at the bottom of the well to keep the egg from sticking

- crack your eggs into the well, making sure to keep yolk intact

- sprinkle any additional seasoning you would like and then bake for 8-10 minutes depending on how hard you want the egg to be (soft yolk lovers can bake for 6)

- remove from oven and sprinkle with cheddar cheese

- serve and enjoy!
