Rice & Bean Burritos 🌱✨

These rice & bean burritos are packed with protein, fresh avocado, and a homemade chipotle sauce! 🌱

Burrito Ingredients:

4 tortillas

1 can black beans

1 can refried beans

1 box Spanish rice

1 avocado

Chipotle Sauce:

½ cup plain yogurt

½ chipotle pepper

1 tsp adobo sauce

½ tsp lime juice

2 tsp orange juice

1 tsp maple syrup

½ tsp cumin

1 tsp taco seasoning

1 tbsp water

Instructions:

1. Cook the rice according to package instructions.

2. Heat the black beans and refried beans on the stovetop until warm.

3. Combine all ingredients for the chipotle sauce in a blender or food processor and blend until smooth.

4. Microwave each tortilla for about 10 seconds then full each tortilla with the beans, avocado, rice, and a drizzle of chipotle sauce.
