Lentil & Yellow rice burritos 🌯

My favorite foods of all time are tacos and burritos 🌯 I just love how customizable and varied they can be.

First I fried an onion 🧅 in olive oil while I started boiling a pot of water for rice. I added 3 small chopped carrots 🥕 to the onion mix. Next I sliced a zucchini, half a red pepper and a long green pepper 🫑. I let that cook for a few minutes while I added a cup of rinsed basmati rice to the boiling water. I seasoned the rice with a vegetable bouillon cube, some salt and a teaspoon of turmeric. 🫒 I also threw in some green olives and a fresh diced tomato 🍅.

I seasoned the vegetables with a couple teaspoons of cumin, paprika, salt 🧂 garlic 🧄 powder, pepper and a pinch of chili powder.

Next I added a cup of brown lentils and about a cup and a half of water to the veggie mix. I let that stew for 10-15 minutes until the lentils became soft.

Finally I assembled the burritos 🌯 with a layer of mixed greens, yellow rice and the lentil veggie mix. I sprinkled some vegan cheese and my favorite hot sauces and it was the 💥💣.

🌶️ I think the trick to getting the seasoning just right is to not make it too spicy. Spiciness can be added afterwards with various hot sauces if desired. 🌶️
