Pepperoni Pizza Biscuit Cups
These Pepperoni Pizza Biscuit cups are an absolutely delicious finger food appetizer. You can also serve these with a salad and/or your favorite sides! Feel free to make them as cheesy, saucy, and or as pepperoni-y as you’d like! You truly can’t mess these up! Here’s how they come together:
Ingredients:
- 1 can of flaky layered biscuits
- 1 jar of your favorite pizza sauce (you’ll use about 1 cup)
- 1.5 cups Shredded Whole Milk Mozzarella (use more if you’d like!)
- 35 slices of pepperoni, minced (use more if you’d like!)
- Grated cheese (parm works great, but I used pecorino romano)
- Dried Italian herb seasoning
- Optional topping: fresh basil
Directions:
1. Preheat oven to 350F
2. Using your fingers, find a groove in the side of each biscuit to evenly split each in half horizontally. Each biscuit should give you two circular rounds. Gently stretch each round to make them slightly larger.
3. Place biscuit rounds into a silicone muffin pan or a heavily sprayed muffin/cupcake pan - I HIGHLY recommend silicone muffin pans in general! Press the biscuit rounds down into the pan with your fingers, forming into little cups.
4. Layer each biscuit cup evenly in the following order (feel free to eyeball this): pinch of mozzarella cheese, about a teaspoon of pizza sauce, pinch of minced pepperoni, followed by another layer of mozzarella cheese, minced pepperoni, and then sauce.
5. Use a spoon to gently press the layers down into the biscuit cups.
6. Finish with a final layer of mozzarella, grated cheese, and dried Italian seasoning.
7. Bake until golden and bubbly to your liking. Top with a final sprinkle of grated cheese and optional fresh basil.
