* 1½ pounds sirloin steak, cut into 1½-inch cubes
* 8 ounces whole baby bella mushrooms
* 2 tablespoons olive oil
* 4 tablespoons butter, divided
* 4 cloves garlic, minced
* 1 teaspoon kosher salt
* ½ teaspoon black pepper
* 1 teaspoon smoked paprika
* 1 teaspoon onion powder
* 1 teaspoon Italian seasoning
* 1 tablespoon fresh parsley, chopped
* 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
* Optional: 1 tablespoon grated Parmesan for garnish
Instructions
1. Preheat your grill to medium-high heat (about 425–450°F).
2. Toss the steak cubes with olive oil, salt, pepper, smoked paprika, onion powder, and Italian seasoning.
3. Thread the steak onto skewers or use a grill basket.
4. In a grill-safe pan, melt 2 tablespoons butter. Add the mushrooms and cook for 5–6 minutes until they begin to brown.
5. Stir in the garlic, thyme, and the remaining 2 tablespoons butter. Cook for another 1–2 minutes.
6. Grill the steak bites for about 2–3 minutes per side for medium-rare, or longer to your preferred doneness.
7. Toss the grilled steak into the garlic butter with the mushrooms for about 1 minute to coat everything.
8. Sprinkle with fresh parsley and, if desired, a little Parmesan cheese before serving.
