Kodiak Protein pancakes with a fruity twist
Kodiak Protein pancakes mix, following the directions, but added some Greek yogurt for a nice fluffy texture and extra protein.
1) Pour 1 cup mix into a bowl, add 3/4 c water (or milk, but I was out), 1 egg, and 1 extra large spoon full of regular Greek yogurt.
2) Mix well until everything is blended together, try not to over mix. Let it sit for about 10 minutes so the whole grains can soak up the liquid, it will be less gritty.
3) Cut up the fruit you want to top the pancakes with and take the syrup out of the fridge. I use real maple syrup, so much better in every way!
4) Heat your pan to medium-high heat, spread with butter. Once butter is bubbling take a 1/4 measuring cup and scoop the batter onto the hot pan. Let cook for a couple minutes, bubbles will form in the pancake batter, then flip and cook another 2 minutes until nice and golden brown.
5) Place the cooked pancakes 🥞 on your plate, spread maple syrup over them, top with fruit 🍓 and as you can see I added whipped cream to one for a sweet treat! Enjoy!
👍Pros: A minimum of 18g for 3 small 4" pancakes made this way, my plate probably had an equivalent of 27g protein.
I made this with extra protein so I can help my body absorb the calcium and vitamin D3 supplements I am taking, vitamin k from the berries, so my bones will hopefully recover from periosteo (not positive if that is the right term), according to my research I have done. My doctor is also helping me with a plan. I'm trying hard to exercise as well. Bone strength develops with weight bearing exercises such as walking, and also doing Pilates. Whole grains are better than highly processed broken down flours.
👍Pros: These taste amazing, my husband who is a picky eater when it comes to new things ate these without a blink or question. I asked what he thought since it was whole grains and he said it was good, he couldn't tell a difference!!!
