Ingredients
* 2–3 cups fresh okra, finely chopped or blended
* 1 lb mixed seafood (shrimp, crab, , fish ,snail or your favorite seafood)
* 1–2 fish fillets (optional)
* 1 medium onion, chopped
* 2–3 tablespoons palm oil
* 2 tablespoons ground crayfish
* 1–2 Scotch bonnet peppers (ata rodo), blended
* 2 seasoning cubes
* Salt to taste
* 2–3 cups seafood or chicken stock
* A handful of spinach, ugu (fluted pumpkin), or scent leaves (optional)
Instructions
1. Clean the seafood thoroughly. If using crab, crack the claws slightly so the flavor can come out.
2. Heat the palm oil in a pot and sauté the onions for 2–3 minutes.
3. Add the blended pepper and cook for another 2–3 minutes.
4. Pour in the stock, then add the seasoning cubes, salt, and ground crayfish. Bring to a boil.
5. Add the crab and fish first since they take longer to cook. Simmer for about 8–10 minutes.
6. Add the shrimp, snail or other seafood and cook for 3–5 minutes. Avoid overcooking the shrimp.
7. Stir in the chopped okra and cook for 3–5 minutes until it becomes slightly thick and draws (gets slimy).
8. Add your leafy vegetables, if using, and cook for 1 minute.
9. Taste and adjust the seasoning, then remove from the heat.
Serve with
* Eba (garri)
* Pounded yam
* Fufu
* Amala
* Semovita
For a richer flavor, you can also add smoked fish, periwinkle, or dry fish along with the seafood. This gives the soup a deeper, more traditional Nigerian taste. Enjoy!
