Ingredients: For the crust: 2 cups chocolate cookie crumbs 6 tablespoons melted butter 1/4 cup sugar For filling: 32 oz cream cheese, room temperature 1 1/4 cups sugar 4 large eggs 1/3 cup heavy cream 2 teaspoons vanilla extract For raspberry swirl: 2 cups fresh raspberries 1/4 cup sugar 1 tablespoon lemon juice Instructions: Prepare crust: Mix crumbs, butter, sugar Press into springform pan Bake at 350°F for 10 minutes Make filling: Beat cream cheese until smooth Gradually add sugar Add eggs one at a time Mix in cream and vanilla Make raspberry sauce: Cook raspberries with sugar Strain seeds Cool completely Assemble: Pour cheesecake batter Drop raspberry sauce on top Swirl with knife Bake in water bath at 325°F 60-70 minutes until set
