PUMPKIN BARS 🧡
Ingredients:
* 1 c. pumpkin puree
* 1/2 c. vegetable oil
* 2 eggs
* 1 c. white sugar
* 1 tsp cinnamon
* 1 tsp salt
* 1 tsp baking soda
* 1 tsp baking powder
* 1 c. all purpose flour
CREAM CHEESE FROSTING:
* 4 oz cream cheese @ room temp
* 1/2 c butter @ room temp
* 1 tsp vanilla extract
* 2 - 1/2 c. powdered sugar
How To:
1. Preheat oven to 350*F and grease a 9x13 pan and set aside.
2. In a mixing bowl combine pumpkin puree, vegetable oil, eggs & sugar. Mix well.
3. In a smaller bowl, add cinnamon, salt, baking soda, baking powder and flour. Whisk together.
4. Slowly add dry ingredients to wet ingredients. Mix well;
5. Pour batter into prepared 9x13 pan.
6. Bake for 22 - 25 minutes or until toothpick inserted into center of cake comes out clean.
7. While you wait for bars to cool, make the frosting: In a bowl combine cream cheese and butter. Mix until smooth and silky.
8. Add vanilla and powdered sugar 1/2 cup at a time, until desired consistency is reached.
9. Spread cream cheese frosting onto cake. Cut into squares and enjoy :)
