Stove Top Chicken Fajitas
How about a quick, easy meal for dinner?
(This was for two servings; double if needed!)
Here’s what you’ll need:
- large chicken breast
- 1 tbsp of oil (avocado, olive, etc.)
- 3 bell peppers
- 1 full onion
- 3 garlic cloves
- 1/2 cup of rice
- 2 tbsp of fajita mix (I also used other seasonings for additional flavor: garlic powder, onion powder, paprika, chili powder)
- 1/2 cup of mild cheddar shredded cheese
Directions:
For vegetables 🧅🧄🫑
1. Cut up your onions, garlic, and peppers.
2. Add a tbsp of fajita mix to your vegetables.
3. Put oil into a pan and toss in onions and peppers to sear until soft.
4. Add in garlic, stirring until fragrant. (Add more oil if needed)
For chicken🍗
1. Cut chicken into small pieces as shown to cook faster.
2. Season with 1 tbsp of fajita mix.
3. Put oil in a pan and sear the chicken on each side until fully cooked. (Up to 7 minutes TOTAL depending on slicing size)
4. Shred the chicken and put aside.
For rice 🍚
1. Pour rice into a pan.
2. Cover the rice with water (I just eye how much water I need-usually a bit more water than rice)
3. Put some garlic in there and stir for additional flavor.
4. Make sure rice is simmering, then put a lid over the rice for twenty minutes, stirring occasionally.
5. If the rice is finished, stir, and put it aside.
Let’s put it all together 🧅🧄🫑🍗🍚🧀:
1. In your vegetable mix, add your chicken and rice, adding a little more oil as needed.
2. I added a few more seasonings for flavor (listed above)⬆️
3. Add cheese, letting it melt into the mixture.
