easy loaded potato soup
start off by cutting 2 pounds of bacon into 1 inch cubes
Fry until done and drain the grease (NOT IN THE SINK!)
add bacon back into the pan
chop potatoes into bite size pieces and add into the same pan with the bacon
fill with chicken broth and boil till potatoes are fork tender
add 1/4 to 1/2 cup sour cream and add in spices (I'll add those below)
serve with shredded cheese and green onions on top if you'd like but soup is good on its own
