The white flour version of this is just as amazing and already on my page! 🫶🏼

Hamburger buns made with freshly milled flour - Khorasan wheat

1 cup warm water

2 1/4 tsp active dry yeast (1 package)

3 tbsp sugar

1 egg + 1 for egg wash

3 tbsp butter (softened or melted)

1 tsp salt

~3 1/2 cups freshly milled flour

Optional: Sesame seeds or other toppings

Bloom yeast in warm water and sugar

Add butter, egg, and salt. Mix.

Add the 2.5 cups of the flour and mix until combined. Allow to rest for 5-10 minutes to give the flour time to hydrate. Then add more flour slowly, making sure not to add too much. You just want the dough to start cleaning the sides of the bowl.

Knead until the dough passes a window pane test. This may take 10-15 minutes. In that time, the dough should become less sticky as well.

Shape and grease bowl, let rise until doubled in size. ~1-2 hours.

Divide dough into 8 pieces. Shape into buns. Press down and allow to rest again for 30-40 minutes.

Egg wash, top with sesame seeds or other toppings if you want.

Bake at 375F for 12-15 minutes until golden brown. You do not want to overbake these so keep an eye on them!
